Do any corruptions show when you use Canon's software?
Just trying to narrow things down.

Just to make sure that you do not have a hardware problem:
Have you tried using a different USB Cable or a different card in the camera?
How have you checked that the images in the camera are ok? Are they o.k. if you import to Image Capture?

I tried 'editing' one of these corrupted images and the export version seemed ok...? So it seems the Aperture is corrupting the preview image?

Image Capture is a utility Program on the Mac for importing images from devices. You find it in the Applications Folder. It is used to download images from your mobile devices, cameras, scanners - very basic. So it is a good test to see if your camera and card are o.k. If you see the same problems in Image Capture, then Aperture is not the culprit here.
So it seems the Aperture is corrupting the preview image?
You can try to rebuild the previews or to reprocess the raw masters.
- To rebuild the previews: Select the images in Aperture in the Browser, ctrl-click the selection, hold down the options key and select "Generate Previews"
- To reprocess the raw master images: Select the images in Aperture in the Browser, ctrl-click the selection, and select "Reprocess Masters"
P.S: I see, Kirby told you already about rebuilding Previews ...

VideoIt is a bad idea to import from the camera. Has this ever happend when using a card reader to first import?

This doesn't seem to change anything... Images still appear corrupted
Maybe it's an idea to buy a card reader?

VideoAlso, never, ever, allow Aperture to remove images from a memory card. No experience with your camera, but I know that some cameras will misbehave if battery power is low even when deleting in the camera. Always Reformat a card to delete images, which of course is all at once.
