I think you'll have to find a third party printer. But then you'll have to re-arrange the pages. Pages is a nice programme for simple lay out work, but for real annuals there are professional programmes, like Quark Express or InDesign so you can make twin pages a printer can work with, like page 1 next to page 16. I make my (simple) annuals in iPhoto. The quality of print is good.
Thank you. I'ev made lots of books in iphoto but don't think I can have the flexibility I want there. I looked at burb but it is so much easier to use inspector to layout the pages. I heard about InDesign but I don't see why I can't push it with pages, although maybe not...
I don't plan to print it myself. I expect to have a 100+ page hardcover book at the end.

Make you book in "Pages" or any program you like then goto print and at the bottom of the print pannel you will see a button/pull down menu "PDF" do "Save as PDF" and save the file to a USB disk/pen/stick. Then take that stick to a printers that is local to you that offer book makin/bindind services.
As for quolity PDF is desined for this sort of thing so use the highest setting you can.
As for "re-formatting" PDF should print the same nomatter wich service prints it. You should format the page your self and check it using "preview" any printed PDF document should look exactly as in preview.
