Try a reset of the printing system.
- Open System Preferences > Print & Fax
- Move the cursor over the Printers list
- Hold down Control and click
- Select 'Reset printing system' popup
This will delete all your print queues but not the drivers, so you will only have to add the queue to the HP again.

Thank you PAHU!
I had the same problem as "straity", but with an Epson Artisan 710. Your suggestion worked for me!

Hi! PAHU, your suggestion was amazing. I've been trying to get my printer (Canon Pixma MP560) to work for hours now, and your suggestion was the most simple, straightforward, and definately the best suggestion because it solved my problem. Thank you so much!

Thanks PAHU, after several hours my problem finally solved. Epson 1280 failing to print after (admittedly late) upgrade to Snow Leopard from 10.4.X. What can I say, I hate change...
