Try a different browser.
I know on Android all the browsers allow you to set a switch called "disable mobile browsing" or "request desktop site" and even have permanent settings for desktop view or mobile view, you can even set it to report it as an iPad, but then these tablets have flash and can support a full desktop site.
But anyway, I believe these same browsers "outside of android default" are also in the ios AppStore.
I have never used anything outside of Safari on my iPad as I consider the web dead on this device, but I'd be surprised if those features are not also in the ios version of the app, aside from flash.
Just type "browser" in the search bar.
The problem might just be the result of ios being so locked down, and restrictive that these apps simply can't offer this type of functionality.

There are a number of browsers available in the app store that allow setting the BrowserID to non mobile versions. iCab and Mercury are two examples.
When I need to view a full site I use the atomic Web browser. In it you can set the type of browser the sited thinks you are using. I setitto Internet Explorer and don't see any mobile sites that way.
