Is your iPod signed into the App Store in Settings/Store/Apple-ID?
Any restrictions set in Settings/General/Restrictions?
Did you try to let iTunes do the syncing by selecting the songs in the music pane? If this works, switch back to manually managing music.

Thank you Ingo2711
My iPod Touch is signed into the Apple store., and there are no restrictions in the general settings.
I went back to iTunes, connected the iPod, checked for updates and allowed the installation of iTunes 10.
On completion, and as you suggested I let iTunes do the syncing from the music pane, but still could not see them on the still connected iPod, but after turning it off, and then on again, the synched music appeared.
I then backtracked, selected music manually, with the same no show, but after turning the iPod off, and then on it appeared as planned.
It seems I somehow missed the part of the process, needing to turn the iPod off, and then on again after synching., but thank you for your help.
