How do I get (os x 10.7.3) Multiple Screen Displaying multiple apps running in multiple windows as I had with Snow Leopard?

Previously, with the use of Snow Leopard, I was able to have multiple windows open, showing multiple apps running, on both screens (20" & PowerBook Pro).  With the move to Lion (10.7.3) I have lost the ablity to do that.  I need to do that.  It seems with Mission Control thinks having one App open and in view at a time is enough.  Going from one Pane to another just does not fill the bill.  I do not share this sentiment.  I want to see multiple apps at a time.  Does anyone have an fix to this dilemma?  I thank you for any help.
