I'm sure there's lots of people that have done it, but it's one of those things that's unusual.
Here's how I would try it...
Bind the client workstation to the server.
Create a test user on the workstation. Create some files on the desktop of the test user.
Create the test user account in workgroup manager on the server.
Ensure that when you set the password for the new test user in OD, you enter the same exact password that you did for the local account on the work station.
With the test user selected in WGM click the preferences button at the top.
Click the Mobility preference button.
Click the Rules button.
Click the Home Sync Button.
Click the "always" button
Click apply now.
Now when you log in, you should see your home folder sync to the server. (hopefully!) Log out of your test user account.
On the server, navigate to the test users home folder location and verify that the folders you created on the desktop properly sync'd to the server.
If it worked as expected, then create your users accounts with names and passwords that match local user names and passwords on the workstations.
Follow the rest of the steps and Voila!
