Can I use pictures from Apple on the cover of my iBook? For example the iTunes Match logo/cloud?

I strongly suspect the answer is "no". From Apple's Copyright and Trademark Guidelines:

    2. Apple Logo and Apple-owned Graphic Symbols: You may not use the Apple Logo or any other Apple-owned graphic symbol, logo, or icon on or in connection with web sites, products, packaging, manuals, promotional/advertising materials, or for any other purpose except pursuant to an express written trademark license from Apple, such as a reseller agreement

    Thanks MichiHenning

I'm asking because I can see quite a lot of apple symbols on covers.

Would the worst case be that they don't approve the book? Or is it too risky to send the book to apple?

I would think that the worst case is that they ask you to change the cover. If you show the logo in a positive way, they may well decide to accept it.
