You have to bind the system creating the image to any OD servers you wish access to. In your case that would be all 3 servers.
You state that you wish to "choose any 1 of the 3" during the restore process. If you mean you want UI to appear and ask which one to use... there's no way to do that. If you want specific machines assigned to specific servers, you can do that by ethernet address.

I didn't think there was a way to have the UI offer me a choice of servers to bind to.
If i bound my machine to all 3 servers when building the workflow, will the imaged machines also be bound to all 3 OD Servers when done?
also, can you point me to the right direction on how to set up a computer to bind to a specific od server using a MAC address? will I have to create 3 different workflows, 1 for each server and then add another workflow to filter by MAC address?

I just tried binding my computer to all 3 servers but was not able to because the other 2 servers are replicas. so that idea won't work.

In the "Apply Settings" action, you add an entry for each computer you want to bind. Select the server, enter the MAC address, and login info (if required).
