If your machine fails due to any manufacturing defect during its warranty period, it will either be repaired or replaced with the same model, at Apple's option. If it is damaged through accident, abuse or negligence, the warranty won't cover repair or replacement.

Doesn't matter. If a replacement is necessary it will have at least the same functions and options:
...Apple will, at its option, (i) repair the Apple Product using new or previously used parts that are equivalent to new in performance and reliability, (ii) replace the Apple Product with a product that is at least functionally equivalent to the Apple Product and is formed from new and/or previously used parts that are equivalent to new in performance and reliability, or (iii) exchange the Apple Product for a refund of your purchase price.MacBooks iMacs iPods AirPorts, Mac OS X (10.7.4), 27 years Apple!

This is an area of contention for some - but I'd buy AppleCare. You can find it cheaper than Apple's $350 on Amazon and various other sites. $300 at Amazon vs. $350 from Apple.

Well, for instance they want to change my product, do they have a spare somewhere, or will it take them a few days to get It to me? I'm not buying the stock model. I'm upgrading the RAM and maybe the Processor(if money permits). 512 gigs of HD is not too much but OK, I'm not gonna waste 600 A$ on that.
But my question is do they change my model instantly or do they take a few days...
And can I get these custom models from an Apple store or online is the only way?

If it is customized (more memory, upgraded CPU - what used to be called "build to order") Apple Stores generally do not have replacement units in stock, but the turnaround is usually no more than a couple of days.
