Have you tried turning off 'tap-to-click' in
> System Preferences > Trackpad | Point & Click ?

I just tried it and it's still doing it. I'm thinking this is just standard on these laptops because I've gone into evey menu and clicked everything I can think of. Guess it's just something I'll have to deal with.
Thanks for the feedback.

BTW, I figured it out. It's under the mouse settings. The reason I didn't see it before is because I don't use a mouse so I hadn't bothered to search around in the particular setting...thanks again for the response!

Mine works like that. Perhaps the double-click speed is too fast and you're not registering the double- and triple-clicks.

Mine is in system preferences> track pad.
I wonder, have you tried, after changing the settings, to restart?

HERE's WHAT WORKED FOR ME:
Plug in a USB mouse, Open SYSTEM PREFERENCES. Click MOUSE. (instead of Trackpad) Change CLICK SPEED to a slower value. (The halfway point worked well for me. This setting is not enabled when the mouse is not plugged in.) Now, close PREFERENCES, and unplug the USB mouse.
The slower click speed should work on your trackpad too!
