See below - this is my "full" font list through the format bar:
Also - i use a font management tool to manage fonts on my computer, and the ios system fonts (as detailed on http://support.apple.com/kb/HT4980) aren't there, either, so it's not a matter of having them activated or deactivated

Jul 27, 2012 8:33 AM in response to powerfulpuffinby K T,'Format' is in the upper menu, not the toolbar...just so we can both use the same terminology, thanks.:) You're in the right place for iOS fonts, tho.
And yes, your list is way short in any case. There shouldn't be any requirement for you to load the full list yourself and I can't see why you don't have them all, sorry.
I can only suggest to reinstall iBA - have your tried that already?
Which OS X are you using?
I hope that 'font management tool' hasn't somehow led to the issue as well.

I'm on 10.7.3
I reinstalled iBooks this morning, hoping that would solve the problem. Unfortunately, it doesn't seem to install any fonts...
I don't think that the font management tool is the problem, but am having IT investigate as well...
thanks for the help, though

Not iBooks.
iBooks Author on your Mac.
iBooks is on your iPad.

Jul 27, 2012 11:18 AM in response to powerfulpuffinby Tom Gewecke,What kind of list do you see if you go to Format > Fonts > Show Fonts?
IBooks Author doesn't install any fonts, that list where you have problems just lets you easily see which fonts on you Mac are also available in iOS.
