Unfortunately, there isn't an option in Safari > Preferrences to change this.

Could be worse. Mine is displaying only the domain. The stuff after that only displays if I click in the address bar as if I am going to edit.

I tried restarting Safari and turning off extensions, but ended up having to reboot to get the latter part of the URL to display again. During the time that it was not working, I noticed that while in full screen, it did work correctly. I don't use Safari in full screen normally, but tried it to see if the URL would be there.
