I found the folders but their modification dates didn't seem to reflect known changes to my Notes and Reminders.
I think these must be the actual data documents within the folders because their modification dates were right when I made my last test changes to Notes and Reminders. I'm not sure why folder mod dates doesn't get updated when anything within the folder is changed.

The stuff in the Notes folder (so the NotesV1.storedata-shm and a couple other files in that directory) are the core data database that has the notes. The plist file is the preferences... it's not that important. But make sure you get the Notes directory with all its subfiles (there can be 3 of them, I think depending on state).

Thanks William. I realized that since I'm using an Apple Time Capsule after getting religion a month ago, it's backing up my whole Library. I verified the Reminders and Notes data are safely tucked away for a rainy day should it materialize.
