I am having the same problem (the images and text all show up washed out), in fact opening many templates causes Numbers to crash. It's also causing my zoom to multiply by 100 (ie instead of 100% it goes to 10000%). Have reinstalled iwork but problem remains. Did you find a solution? Here are some screenshots:

Well, after digging around I found a solution. Software update doesn't automatically download the latest version of Numbers after installation. Do a search for Numbers version 1.0.3, install it and, in my case at least, the problems were solved (though the zoom still shows 10000% at the bottom the screen the actual zoom is 100%). The interesting thing is you have set Gatekeeper to accept software from "Anywhere" because it claims the update is from an unknown source.

yeah what I ended up doing is copying the numbers application over from a back up that I did before I upgraded to Mountain Lion. That seemed to solve the problem. Glad you found a solution as well.
