In order to access the Profile Manager user portal (yourdomain.com/mydevices), your users will have to authenticate. Profile Manager can take that authentication information and fill in the Exchange payload using the %short_name% payload variable, and leave the password and domain for the user to fill in manually.

Thanks for the information Aaron. I worked with Apple support, and apparently they corrected this for the user payloads, but not for the device payloads. They put in a request to engineering to correct this issue. I will look at your suggestion to see if I can use it as a workaround.

Does anyone know if this has been fixed under Device Groups yet? as im having the same issue (running 10.7.4)

Unfortunately, Apple has not addressed this issue. Even in Mountain Lion, this is still a problem.

I just put in %job_title% as the domain name and never set the job title for the users.
