I had a similar problem with my iPod when I synced it to update music and then the next time I turned it on everything seemed to disappear. All my music and videos weren't there but it says that space was used. (I went to the "about" menu and it said that there were no audio or video files, that everything had been taken up by "other"). I've come across a few suggestions and pages saying to erase the disk in "disk utilities", however in my case that didn't work either. What did work was letting the battery drain out and then connecting it back to iTunes. Not sure if this would work for you but it might be worth a try.
