Do you still have the "Install OS X Server" (or whatever it's called, don't have it in front of me) image in /Applications? If not, you might be able to download again from the AppStore. You might have to download the image from a different machine because you might get the "Already Installed" in the grey button on the right side if you do it on the same machine.

When you re-install Server.app, you'll likely find that your DNS settings have been retained as well as your Open Directory settings. Even worse, these settings are likely broken and, if not already, will likely be broken when you try to reinstall Server.app.
I'm still looking for a solution. I'm thinking about calling Apple Enterprise support here in an hour when ML finishes it's reinstallation.

This procedure will reset the LaunchServices database. All associations between file types and applications will revert to their defaults. If you don't want that to happen, STOP.
Back up all data if you haven’t already done so. Before proceeding, you must be sure you can restore your system to the state it’s in now.
Launch the Terminal application in any of the following ways:
☞ Enter the first few letters of its name into a Spotlight search. Select it in the results (it should be at the top.)
☞ In the Finder, select Go ▹ Utilities from the menu bar, or press the key combination shift-command-U. The application is in the folder that opens.
☞ Open LaunchPad. Click Utilities, then Terminal in the page that opens.
Triple-click anywhere in the line below to select it. Copy or drag — don't type — the text into the Terminal window:
/System/Library/Frameworks/CoreServices.framework/Versions/A/Frameworks/LaunchServices.framework/Versions/A/Support/lsregister -kill -r -domain user
Press return. Log out, then log back in.

Removing server.app, then running the one command from Terminal
worked great for me.
I could then install Server from the Appstore again and do a fresh setup.
Actually I removed it again, because server still causes me more trouble than benefits ;-)
But now I know how to deal with it.
