I'm not sure what to say since you seem fairly upset.
First, I should start by saying I am going to be the bearer of bad news to you.
There is no way to downgrade back to iOS 5.1.1. You are unfortunately stuck with iOS 6.
As for your issues with iCloud, it is one of the better features I've seen added to the iPhone in a while and my whole family uses it. A HUGE benefit is the ability to restore your phone even if you are away from your computer. You can technicaly get by without having a computer to sync with since the backups go to the cloud.

So why exactly did you upgrade the iOS if you did not want and do not like all the new features in iOS6?
As has already been stated, there is no supported method to go back to a previous iOS version.
Maybe if you explained what specifically is the issues you are experiencing instead of ranting how you hate everything, we can offer some advice on how to resolve those issues.

First of all, the cloud I do not trust. Some people like it, some don't. I don't trust something I have no control over and someone has database access to. Sorry, it's just something that does not appeal to me.
It may be fine for those who love that social interaction and everyone being connected and life is one big circle, but it's not for me. I was fine with it the way it was and not having it stuffed down my throat at every turn of the hand.
The features I didn't like I was under the impression I could just not use them.
The email was one thing I was wanting it for. It looked like it was upgraded with lots of features added to it, like the ability to put new folders and sorting in, but no, it's just some lame VIP area for my contacts. Totally unnecessary for me. Apparently the rest of the stuff I misunderstood as it seems to be for iPad only.
Diesel vdub - I'm not having issues. They turned this phone into a gigantic Apple version of facebook. I hate facebook and don't use it. Why would I want my apple product to be like it?
Again, I thought it would allow me to turn on or off these new features.
Older versions of operating systems should be available online for those who want to downgrade.
I love my apple products but frankly, I don't love their heavy handed approach to many things.
I guess I'm stuck or I can reinstall from scratch and never update.
