Ignore my last comment - found a simple fix for this issue in Outlook for Mac here - http://apple.stackexchange.com/questions/66229 - basically sort by Date Sent instead of Date Received. Probably not related to the Apple Mail issue.

Guys... i think this problem is solved using Mountain Lion. I upgraded to ML and voila.... i can see whom i sent email to. Even if im sending it using my blackberry.

I haven't had the problem in my actual Sent folder for a while. However, it's still an issue with the Archive folder or any other user created folder. It only lists the sender, which, again, is always me for messages I've sent.

Ametis: I have ML but I still have the issue. Checked with another colleague and he has the same issue. Must be a mapping issue when the email is moved from the Exchange Server to the "ON MY MAC".
Can you please confirm if you are interfacing with Exchange?

i'm not sure this is what evryone is looking for but it certainly solved the issue for me.
Here's how :
STEP 1. On your mail app side menu click on your gmail sent mail folder (all your sent mail will appear on the right with sender name as supposed to the name of the person you are sending it to)
STEP 2. Move your cursor to the top of the screen (main menu) and click on "Mailbox" navigate to the bottom of the menu and chose "Use This Mailbox For" and pick : "sent"

I use exchange, gmail, and icloud's email in mail application. And after upgrading to ML, all of the problems are solved. i wish there is something i can help you with.

For what it's worth, the problem still remains for me. Occasionally the issue vanishes though and the sent column sorts as it ought to. No idea why.
BTW, tried nwriko2's idea (above), but I couldn't pick "sent" — those options were grayed out.

Aside to this, Have u guys try using Outlook? i found that using outlook does not have this problem (even when using Snow Leopard). I forgot to mentioned this before.

are u sure that before trying the mailbox option on the top menu u have selcted the sent folder on the left menu?

let me add a piece to this explanation.
when you perform the use this "mailbox for" operation, what will happen is that if you look above on the left side menu a sent folder will have been specifically created for THAT mail account and inside THAT folder the name will not appear as yours but u'll be able to read the name of the contact you are sending it to. if instead you click on sent folder of gmail ora anyother for that matter u'll still see your name.

I have found a solution which works:
Go to 'settings' (in Dutch: Ga naar "instellingen")
Choose 'E-mail, contacts, dairies' (in Dutch: kies "E-mail. contacten, agenda's")
Select the account by which you have the problem in your sent item box.
In my case it's an IMAP account.
Tap on account to see or to manage the account settings.
Tap on advanced (Dutch: geavanceerd) to see or to manage the advanced settings.
What you have to change are the upper 3 settings. which are 3 mailbox settings (dutch: Postbusinstellingen).
Select by each of those three the right map. For example: select by send (dutch: verstuurd) the sent items map of your account.
Confirm all changes and go back to your e-mail and you will found that the sent items are shown correct with a nice icon of a paper-plane.
