You can use almost any picture software that would work camera. On your Mac, you can use iPhoto and/or Image Capture.
By the way, openning image capture while your iPad is plugged on your computer will also allow you to set which picture software to automatically open when your iPad is plugged.

This only works for photos made with the iPad.
What about the photos stored in albums?

The sync is one way - computer to ipad.
As the pics came from your computer in the first place, they should still be there and should be included in your regular backup copy of your computer.

It's not the case.
I made a lot of photos with different cameras during my last travel and synced it to the iPad from a PC that I won't have access again.
I though all my photos will be secure if I stored them in my tablet.
Now I can't donwload them to a PC and I can't use them. It's like I made not photos at all.
Seems that Apple's tablets can't be used to carry photos even when you sync them through iTunes.
Great product, yes.
Nevermind, I'll find another tablet that can.

If fact, there are 3 methods to get photos to an iOS device and since all of them will put pictures in the photo rolls, only the photo roll is natively synced to a PC (3 methods are taking pic with the device, wi-fi transfert from camera to iOS device and Apple photo connector).
Your issue is that you are trying to recover photos from your iPad since you lost access from your original device from which you synced those. But even if you don't have the recover function natively on your iPad, there are plenty of third-party apps that should allow you to do that like this one; http://www.iphone-to-ipad.com/blog/transfer-photos-iphone-computer-wi-fi.html
Given said that I never used myself such apps, so the one above is just an exemple and not a recommandation. You could look on the App Store or Google to find one you would like.
