It should be getting that info from your contacts. Open contacts and go to your entry and delete or correct the e-mail address there.

No there isn't anything there, only the emails that are active! I added this email to messages but after adding it realised I had stupidly entered it incorrectly, but it isn't in contacts.

When you add an email to Messages it sends a confimation emal to that address. If the email you added was bogus then no confirmation should have been received and the email should not have been added to messages.
What version of the OS are you running?

Yeah I understand that, unless someone has an email address just like my mis-spelt one. The tick box next to the email is greyed out and can't be selected.
I am running OS X, 10.8.2

I have this exact same question too. I inadvertently added my "@gmail" address, but now I can't find a way to remove it. It is unchecked, but I don't want it there at all. It's easy to remove e-mail address from "Messages" on an iOS device, but from my iMac, not so much. I will continue my search!! I understand in your case, the "fat fingered" e-mail address would have the boxed grayed out, since it is incorrect and you never verified it, but can't get rid of it from the list. If you find a solution, I would aprecciate a reply so I can do the same thing too. Thank-you.
