one adapter from StarTech for a 30" Dell monitor
And exactly what model adapter is that?
And what else are you connecting using what exact adapters?Mac Pro (Early 2009), Mac OS X (10.6.8), & Server, PPC, & AppleTalk Printers

Sorry for the late response:
It is a StarTech MDP2DVID active mini displayport to DVI-D adapter. The other screen is connected directly to the DVI-D port on the graphics card, an ATI 5770 that came with the computer.

That is not quite right. Strictly speaking, it is not three dual-Link adapters that are required, but all adapters must be ACTIVE, POWERED Adapters.
Apple's solution requires their Daul-Link adapters because those are the ones with a USB lead to pick up even more power.
Your initail query tlaks of wanting to connect three monitors, but you have only provided connection details for two.Mac Pro (Early 2009), Mac OS X (10.6.8), & Server, PPC, & AppleTalk Printers
