Thank you, Tom. InDesign is the answer. I have successfully upload my Chinese book epub files and everything to Apple as required (Finally, waited for more than 8 months). Now I just hope there won't be any other obstacle. Thank you again for your help.

My first Chinese book is finally on the ibookstore. Thanks for iBookstore Publisher Support. It's so good to see that Chinese is officially supported by Apple. Now I just wish the ibookstores on all the countries that actually use Chinese (Taiwan, Hong Kong, China, etc.) will open soon.
This is the book: 《台北殺人魔（Psycho Justice）》

Yes, the trick is do not use any Chinese character when you edit metadatas in InDesign. Book title, author name, etc. Those Chinese characters will cause errors when uploading through iTunes Connect. Also, do not use Chinese ePub file names for your Asset and Preview files. Input your Chinese Book title only in iTunes Connect.
Hope to see many Chinese books soon. And more iBookstores.

That is fantastic news Epicsword! And great tips.
I am checking it out now.
How did you proof it ... did you use Readium? Or some other epub 3-savvy app?
Or did you just use iBooks and the iBook proofer thing ..

It's very simple. Just upload it through iTunes Producer. If you succeed, it is proofed. If you fail, ITC will show you some error messages which you have no ideal what they are about.
I tried to open my ePub files with my wife's iphone 4 to see if they are ok. But even if they look okay on the phone, it still may not be good enough for ITC. So just upload it, and say something nice to your ITC. Eventually, it will pass. Good luck.

Ok, here is how I did it.
It's a step by step guide about how to make and upload a Chinese book to iTunes Connect. I wrote it in Chinese since it's about Chinese books. Hope it will help.
