It's strange, anyway, delete every mail account and manually add yours.
If the problem persists I guess a restore is the only one way to go.

Check in the mail accounts section under SMTP. See what the primary SMTP server is. How did you get rid of all of her information on the iPhone? Did you do a restore? Are you sharing an iTunes account on the same computer?

When I took over the phone I did a restore. Like I said I've searched every area of the phone looking for her email address. It's not in there. The emails only come from her account when I reply. If I start a new email they come from me. It's so weird. When she looks in her sent messages folder there are the emails. At first she thought I hacked her account but I also have a sent copy in my hotmail. I'm really baffled. I can only assume it has something to do with her using the phone previously but I did do a full restore before taking it over.

Do you have your own Apple ID, and are you using iCloud? Did you set up your Hotmail account as an Exchange account? You did not reply as to what your primary SMTP settings were. Do you use the same iTunes account and is it possible that something about her email is saved on the computer you sync with and could have had the email account information synced over? Shooting in the dark here trying to come up with some thoughts.

It says my smtp is smtp.live.com. Not really sure what that means. Lol
How do I check if its an exchange account? Also what does that mean? And
Yes I use the cloud. And maybe that's it because I used my appleID on both phones
So she could download stuff on my card. (Oh and yes I have an appleID).
Recently she did remove my card number from the account and added hers.
Could that be it? Not sure how that links to email though.

A card number means nothing for the Apple ID, it is the Apple ID that controls things. It could be that her information has been crossed in your account and is causing the problems. You might need to sign out of iCloud if that is what was used the same and check all of the settings.
Your SMTP is live.com, but what account is is logged into? Check to make sure it is yours and not hers. If you don't know what Exchange is, don't worry, you didn't use it then. If both phones are still logged into the same Apple ID, that could be part of the problem. Check that information.
