The default currency symbol is whatever you have chosen in System Preferences. You can choose other symbols using the Cell Format Inspector, as shown in this example:
All three cells in row 2 contain the number 12 (or 12.00). Each is formatted as Currency, with the currency symbol set for each one using the Symbol pop-up menu in the Inspector.
Regarding your second question: In it's present form, the question is too general to address in this forum. I would direct your attention to the Numbers '09 User Guide, and specifically to Chapter 7, Creating Charts form Numerical Data. The guide may be downloaded via the Help menu in Numbers '09.

Thank you for your reply.
I will read Chapter 7 as advise .
For best results ( Such as Group Rows into Categories ) do I need to fill only in English ?
Or any other language will do ?
