You can split your voice recording before and after the part you want to remove. Then select and delete the "stuttering" and shift the recordings to close the gap.
To split a recorded region in select it in the Time Line, then move the crosshair to the split position and use the command "Edit >Split" ⌘T from the main menu bar or the short cut ⌘T.
If you show the Track Editor in the lower half of the application window (by clicking on the "scissors" button), you can select the split position more precisely.

For this kind of editing, audio editors are a lot more convenient than GB - for example Audacity, which is free. In those programs you can exactly do what you want: highlight a certain part of the audio and hit delete.
