A few answers:
Q1) when i double tap a song on my computer, he sound like a VBR mp3 that i have stored on my MBP right? And not in streaming via ITStore...
Yes, the MBP will play the local version of the Song.
2) when i play a song on my iphone, if this song was matched before, then it will sound and play like a 256AAC taken from the ITS but if it was uploaded by the service, it will sound and play like an HQ MP3 of my collection right?
3) if i disable ITM on my iphone and decide to transfer some music from itunes, then the quality of the files will be mp3 and not AAC right?
mp3 and AAC are encoding standards - Music synchronised from your MBP will be drawn from your local MBP Songs
4) i know the changes made with ios 6 about downloading the entire album, the impossibility to delete a single song ecc ecc...but i noticed that if i want to listen a single song, i just tap on it and it will start play and i think that at the end of the song, the music app will not store on my iphone this song, am i wrong?
Yes, the iPhone will have a version of the Song stored in a temporary area
5) (last one) If i have a shi**y version of a song like 96kbs but ITM matched the song, i can delete my bad version and download again the AAC HQ song via ITM but how the **** the service can download his hq song and then apply in one second my tags???? It's possibile that is so easy??? Are you sure about the TRUE quality of the AAC files that we download instead of our bad quality song?
Yes, worth backing up first but by removing the local version iTunes will give you the option to 'download' a 256 kbit iTunes Store version (backup important since the 'match' may provide an alternate Song or version - the 'match' process is inexact).

Ok so it's just amazing thinking about the possibility to have the possibility of downloading a super HQ quality song instead of a bad local file...truly, is it so simple and transparent??? Ok, i also know that maybe ITM will download a different version of the song but if the song is the same, bingo right? I'm always afraid that something maybe is wrong or that IT store a different and maybe a little bit more bad version of his music files for us that we have ITM activated
