I am a relatively new user of I phone and have no clue what I have done but tonight I did something that started some type of voice mechanism for the phone and so it speaks instructions and requires me to double click everything which almost eliminates the ability to use text messaging.  I have no clue how I turned this on and no clue how to turn it off.  Can someone please help???

You turned on VoiceOver.  To turn it off, do the following:

    1. Press Home.
    2. Tap Settings. Then double-tap Settings.
    3. Tap General. Then double-tap General.
    4. Use three fingers on the screen to scroll to Accessibility.
    5. Tap Accessibility. Then double-tap Accessibility.
    6. Tap VoiceOver. Then double-tap VoiceOver.
    7. Tap "On" next to VoiceOver. Then double-tap "On" to turn it off.

Or, you can connect your phone to iTunes and turn it off as described here:  http://support.apple.com/kb/HT3577.

There are a few methods of disabling Voiceover

Navigate to Settings>General>Accessablility and turn off Voiceover

or if it gets too annoying to navigate plug into a computer with iTunes, go to the summary page of the device on iTunes and click "Universal Access" and disable Voiceover there

Ok So I tried randers4's instructions but the voice over makes manipulation of the screen almost impossible - so as I'm trying to get into the accessbility screen my screen goes black?  I'm wondering if I put the phone into "don not disturb" mode or something?  I have turned the phone off and on several times and when it comes back on the screen appears normal for a few seconds but then goes dark again?   eh this is frustrating...

Reset it by holding the power and home buttons at the same time until you see the Apple logo, then release.  After it restarts, either try the steps again (exactly as written), or turn it off using iTunes as outlined in the link provided.
