If your phone is not jailbroken, then he did not hack the phone.
It's entirely possible, however, that he has managed to figure out the passwords for facebook, your Apple ID (which is used for iMessage), etc.
Change all of your passwords. Now.
There is no device that he could use to extract information from the phone if it wasn't jailbroken. Heck, law enforcement complains because they can't do it...
ok thank you. I was talking to a IT security forensics person and they told me that there is a devise that plugs into your charging area and looks like a flashdrive that can bypass your password and download all of your data even deleted text messages from the hard drive in your phone.
he had the ability to have access to my phone all night.
is there a way he couldve jail broke my phone to hack into it and then un jail break it.
I was also told that if he used a mac computer he couldve done this through itunes and there is a way to find the trace of my data being extracted on my iphone and will also give mac address that they pulled the data onto.
Also which passwords should i change? i already changed my screen password, my facebook, my online banking passwords. Do i need to changed my apple password even though i havent sync'd my phone for over 6 months? i havent sync'd my iphone to my itunes in over a year because my laptop crashed and i havent installed itunes on my new one.

Change your e-mail passwords, your Apple ID password, basically, everything. Especially if you use the same password or the same password with minor variations on multiple sites.
There is not device that can be plugged in and access the data on an encrypted phone.
If he has your Apple ID password, that means he can set up iMessage on his own iPhone/iPad, etc. and see all of the iMessages you send and recieve.
If you truly believe he is accessing this information, call the police. It's a crime.
