I have the same question. But, the Alternate ID is created with the first email account created when you activate the iCloud Mail. I am not sure it can be changed. I have deleted the email that I first setup and it still has the Alternate ID as the first email used to setup the account. Outside of the non-Apple address.

The alternate email address is strictly speaking a non-Apple address which can be used by Apple to contact you. You can change it at http://appleid.apple.com
You cannot change the @me.com or @icloud.com address you created when you opened your iCloud account. You can create additional addresses as 'email aliases' and you change those at http://icloud.com

I think I've got it!!!!!
I've been looking for a solution for this for several hours and from what I've been reading it all seems impossible, but go to http://appleid.apple.com/
Click on manage your apple id on right
On one account all I had to do was click on edit, but on a different account I had to click on "Password and Security" on the left, answer the security questions and then I was able to change my alternate email address!

Changing the alternate email address is the easy part, unfortunately. It's changing the Apple ID that this is about, and that does seem impossible. Good info though on changing the email, so thank you for that. I was able to change mine with those instructions.
