I couldn't find a way to change Safari's settings so I remapped the Quit command to Option+Q in System Preferences -> Keyboard.  See evenhuis posting above.

This "answer" for FIREFOX is not applicable to the question about SAFARI.

Brilliant!  I was wondering if there was a way to just disable the cmd-Q in Safari, it's the only place where having the Q next to the W in "Querty" is so inconvenient.

I made my Cmnd-Q into a "Home" key, which is innocuous for me.  I tried to make the Q into another "Close Tab" so if I accidently hit it rather than Cmnd-W it would do the same thing, but then Cmnd-W didn't work.  (I think.)  So having the Q do something harmless is just fine.

Thank you, this has bothered me since they changed it.

Under History, there's a command to Reopen Last Closed Windows. I guess if you made the mistake of closing a window with multiple tabs, and before you do anything else, realize this mistake, then you can get it back. I just tried it, and it works.

It's not what you're looking for, but it may meet your needs.

No, this does not restore the state of the pages, or content of fieldsl, or state of Flash apps etc.

Sorry. I didn't realize that Safari 4 could do that.

The original question asked about how to get Safari 5 to give a warning when closing multiple tabs, as Safari 4 did. I just wanted to give a solution to restore the tabs if you accidentally close a window. It's better than nothing.
