You can move keyboard short cuts:
1) Look up the name of the menu item you want to change by navigating through the menus
2) Open System Preferences by selecting the menu item " > System Preferences", then select the "Keyboard" panel and, finally, the "Keyboard Shortcuts" segment:
click the "+" just below the large box in the middle of the window, then select numbers from the Application pop-up menu and enter the name of the menu item you want to override the key command for:
Finally, type the key combination you want to use for Zoom in.
Repeat for Zoom Out

Thanks. But it does not seem to work. At least not on Mountain Lion (10.8.2) and Numbers (2.2).
Edit: Oops. Sorry, my Zoom in wasn't Zoom In!!!
