Do you have iPhoto on your iPhone?
Then this should work - use iTunes to sync your iPhoto Library back:

I don't have iPhoto on my iPhone, I only have the standard iPhone 'Photos' utility/app. If I download iPhoto for iPhone will I be able to transfer my photos from Photos to iPhoto and then transfer to Mac?

From the "Photos App" you can also transfer all your photos that are in the camera roll, when you sync with iTunes. But iPhoto will let you sync your data back sorted by albums; that will be more convenient to keep your albums and library structure.

Great thanks for the iPhoto suggestion - I eventually went with Photosync which is similar (although not as feature ruch as iPhoto) and it did the trick whulst preserving my library structure.
