I use a Mac mini & apple keyboard, but cannot get the screen to display the symbol I am creating on the keyboard. The 'shift Key +2'  shows a parenthesis not the correct symbol. Can anybody help me please?

    1. Which Apple keyboard: wired or wireless?
    2. What international keyboard language?
    3. What symbol do you want to display?

Go to system preferences/language & text/input sources and UNcheck the box for British-PC and check the box for British or US.

    Have you seen this before?

    Yes, many times.

It happens when the keyboard is set to British PC.  That's because the standard British PC hardware keyboard puts " at Shift + 2.  Of course the standard Apple keyboard puts @ at Shift + 2.   People who buy a mini in the UK often want to connect their former PC keyboard to it, so when they set up their machine they need to choose British PC as the keyboard layout so they can have " at Shift + 2 where they expect it..  When someone uses an Apple keyboard, they have to make sure they choose British or US in order to get their @ at Shift + 2 where they expect it.

Please have another look at system preferences/language & text/input sources and make sure that there is only one box checked and that the box is for British or US.  Scroll all the way down to make sure there are not two boxes checked.

If the right box is checked, go to system preferences/language & text/text and look at Symbol and Text Substitution to make sure someone has not set it up to substitute " when @ is typed.
