You can find the SN by:
iPod: How to find the serial number
Also you can go to iTunes>Preferences>Devices and hover the mouse pointer over the iPod backup
Note that you can't locate the iPod by its SN
Apple will not help

A way to track it down is if you DID register with find my ipod.

If wifi is on go to icloud.com. Sign in and click on FindMyiPhone. That can easily be defeated by turning the iPod off or restoring the iPOd.

By placing the iOS device in Recovery Mode and then connect to computer and restore via iTunes. The iPod will be erased. For how to restore:
iTunes 10 for Windows: Update and restore software on iPod, iPhone, or iPad
