How to Lock Programs to Keep Others from Turning then On

I want to use iPads in my office but I do not want my office staff to see my Calander, Contacts, and other programs unrelated to office use. How does one do this, I see that there are controls to stop iTunes, Safari and other programs from showing up but not Contacts nor Calanders for example.


In another example, patients may use an iPad to enter their own data yet I do not want anything but the Medical Records Program to be seen and running.
