There is no support for this.
The iPad was meant to be a single user device so there's no support for separate accounts or separate levels of access.

I don't believe that there's a way other than keeping your own ipad for your own use, and not to allow others to use it.

Maybe I need to sign out of my mail and icloud accounts or never sign in to any accounts when I get a new one - for the others to use?

You can avoid the mail app and access it via a web application (for example instead of entering the info for a yahoo account, I instead go to yahoo.com and access it that way)
For better or worse, beyond what you can do with some restrictions, your main choices are to lock the whole device or have it open.
