I have not seen any mentioning of automatic sharpening on any of the Apple pages for print products, and I do not think that this is done. Apple expects you to provide high quality images for the books (Aperture and iPhoto), with a high geometric and photometric resolution, and only to use iPhoto,  Aperture, or other high quality image editors that preserve the high resolution. Aperture will give a warning, when you use an image in a book that has a poor resolution and will not print well. Automatic sharpening may increase the visible noise and wash out the colours slightly.

See these support articles for Aperture and iPhoto Books, to see Apple's book printing approach:

You should always preview the book carefully at a high resolution - what you see in the preview is exactly what will be printed.
