Safari 6 does not have an Appearance tab in Preferences.

Unfortunately in Safari 6.0.2 (and maybe earlier?) Apple removed the Appearance tab from Safari's Preferences and there is no way to change the fonts from Preferences.
There are Terminal commands using defaults write that can change fonts but I'd need to look them up.

Henri, sorry for misleading you - I am still on 10.6.8, Safari 5, and was unaware of this change.
