The idea of the Exchange server is to have all devices synced to one place (like iCloud)
Blackberry is different and does not use ActiveSync technology.
In fact you are asking here to take a step back.
Solution for you would be to configure the account on your iPad as POP.
For this your Exchange Server needs to be configured to support POP - rarely is.
Or create another email account and forward your Exchange messages there.
Both solutions are not great and the initial setup you have is something most people want.
But everyone is different.

Thanks, I understand what you are saying. I was initially suprised when my laptop emails were in my deleted items folder but now realize I this will make things easier moving forward.

Personally, I always liked the "Delete On" feature of Blackberry devices....you had the option to delete on mailbox, handheld or both. The only other option I could think of would be to setup an offline archive in Outlook as a *.pst file.
