I trying to figure out, does the files roll off/auto delete when you keep saving files in garageband? If not, where do I find the older files because I dont see them anymore. Please someone help me. Thank you.
That depends on how you are saving.
When you use "Save as" and pick new name, then GarageBAnd will save the song as a new project; when you use the previous name, GarageBand will give you a warning, that the file already exists, but overwrite the old file, when you insist. If you have done that, your older files will probably be gone by now, and you need to restore them from your backup. Do you have a Time Machine backup?
By default the project will be stored in the "Music" folder, subfolder "GarageBand", but you may have chosen a different folder, when you use "Save As". All GarageBand projects have the file extension .band; if you want to find all, type ".band" into the Spot LIght search field in the upper right corner of your screen.

YES. I have Time Machine Backup, but i dont see any of the files inside there.
Did you dive back in time in the Time Machine backup to the dates of the sermons you are looking for? You may find your files further back along the time line.
How can I prevent this from happening to the others that I have now?
When you save your GarageBand project save each of them with "save as" with a distinctive, unique name. You could include the date of the sermon as part of the filename, or save each week to a different folder.
