Deleting Documents / iCloud begone

When installing Mountain Lion, I had inadvertently started up iCloud. I also see that OS is using up more memory than SL.

 

1) Is there a way to completely turn iCloud off?

 

2) In system preferences, if I uncheck documents and data, I get a message that it will erase both on my HD. Does this mean the documents folder? I'm not sure what they mean by data.
