Q: Adding RAM to a late-2012 27 inch iMac
This machine ships with 2 slots each holding 4 GB chips and two empty slots. Can I leave the facotry RAM untouched and purchase two 8GB chips and install them in the empty slots, resulting in a machine with 20GB RAM, or do all the slots need to in balance and contain the same size of chip (i.e. 4x4 or 4x8)?

Yes ... you can do that for about $100 (and it is easy to install). The memory should be installed in "matched pairs" which means you can leave the default 2x4gb cards in, add 2x8gb cards for a total of 24gb.
This is what I will be doing with my new machine.
