Shift-click to highlight all tracks on a particular album, right-click to Get info, double-click in the artwork box and navigate to a saved JPEG on your hard drive.
Click on OK and iTunes will add it to all the selected tracks. It also helps if you've selected 'Keep iTunes Media folder organised' in the Advanced tab in Preferences.

That is exactly what I have been doing, but the problem is that after I do that, the artwork stays for a while, but when I reopen iTunes the next day, everything I did is gone and the artwork reset

Is your iTunes Library stored on the same drive as iTunes? If your media is offline when you launch iTunes, that may be a cause?
Do you keep your album art in a specific folder or are you dragging files from an image search, etc.?
Sorry, but other than the above I can't see the reason for your problem.

Get info on one of the affected tracks, then Summary and look at 'Where' at the bottom: it gives the full file path.
If it's on the same drive as iTunes, it should begin 'Users'.
Have you ever noticed exclamation marks by any of the track titles? They indicate that media is offline. If you haven't, then the solution lies elsewhere.

No problem. One further thought, I just noticed your comment about iTunes Match. I don't use it myself but it might be worth exploring for an answer. If some of the tracks are in the Cloud it may be why your album art isn't sticking.

iTunes Match screws up your artwork. There are some workarounds, but I gave up and turned off Match because I cared more about my artwork and it was all too much trouble. But now the horrible iTunes 11 makes it incredibly frustrating to manage artwork....
