In mail, in the menu above, select "Window" and previous receipents. Delete any with maiden name.

If your Maiden name is part of your email address you can't change it, you may be able to make an alias and use that instead.

I'm not refering to the actual email address it self, it is the name that's accociated with it that is causing the problem. For example:
From: Jenny 'Maiden Name' <firstname.lastname@example.org>
Subject: Why wont my name change?
Date: November 29, 2012 8:10:06 AM CST
I need it to say Jenny 'Married Name' now, because its confusing when I put my married name in the signature, but then shows as maiden still in peoples boxes.

Please tell us exactly:
Is it your "signature" (In Mail Preferences) or your Sender's Name on your Account?

I believe it's the 'sent from' name, and that is controlled by the 'My Card' selection in Contacts, so this makes little sense.
To the OP, send an email from the website rather than Mail, let's see if ths behaviour changes with a different source.

I'm going to add a wild guess here:
When you signed up with your ISP, did you establish your email address with them? Such as: Jenny maiden name at comcast.net? If that were the case, you'd need to change it there....
If you're only seeing this behavior with your .mac address, I'd try to set up a new account in Mail and/or iCloud with Jenny married name at .mac and see if that does it. If it does, you can delete the maiden name account.

We found it!
So, a previous recomendation that says search the recipents, caused me to search in my mail box in the mail application on my desktop for just my name. I saw some that said maiden name and some said married name.... I noticed that all the ones from my maiden name were emails I sent from my iPhone.
So for Hooded Claw, also having this problem, go here:
Mail, Contacts and Calendars
Under Accounts: iCloud (mobile me, mail, or whatever you named your mailbox from your iCloud mail)
Under iCloud: Account
Advanced (way at the bottom)
iCloud Account Information
This still had my maiden name. Apparently this does not get updated from iCloud as you would expect it to, but yay it was found and it should be awesome now!
