If you want iTunes 11 like 10.7, go to View > Show Sidebar and it will look like 10.7 version

I had found the sidebar, but the podcast page and store pages are still completely inferior to what I had before 11. I still want to go back. Can I simply install 10.7? Will it overwrite 11?

You need to be careful with reverting. Firstly if you have a backup (either Time Machine or another copy) you can use that to revert your library. You will still need to uninstall & reinstall iTunes.
If you have no backup you can still revert, but changes to your library's file structure may have moved files, so you could get the dreaded 'missing files' icon on some tracks, or new files will not appear in your library (sort by 'date added' & drag the newest files to somewhere safe so you can put them back after you get to iTunes 10.x).
I'd suggest you look at a few of the 'revert iTunes' threads and pick a course that is suitable for you…
