Apple driver support for Bootcamp is still at Windows 7. You may have to wait until (if ever) Apple provides driver support for Windows 8.

I just got the new Mac Mini 2012 yesterday. The HDMI Audio isn't working in Windows 8 yet, but the SPDIF diigtal out works fine for now. "Optical audio input is SPDIF format and uses a standard TOSLINK cable with a TOSLINK mini-plug adapter, accepting up to 24-bit stereo and 44.1-96kHz sampling rate." I'm happy enough for now but I'm sure they will update Bootcamp for Windows 8 at some point soon.

Can't speak to HDMI audio, but I had this same issue and just solved it... I went back to the USB thumb drive that I installed Win 8 from. Open the WindowsSupport->Drivers->Cirrus folder, and run the CirrusAudio64.exe file (or the CirrusAudio32.exe if you installed 32-bit Windows). Fixed my issue right away. Good luck.
