If I now go and buy a few more AE's will they connect wirelessly to the other airport?
AirPlay will work with either a wired or wireless connection to the AirPort Express Base Station (AX). Typically, when only streaming is required, the AX would be configured to "join" an existing wireless network. You can do this with one or more AXs to cover several rooms. A practical limit to the number is 4 or 5 base stations for this purpose.
If so is the easiest solution just to have an airport hardwired next to my hub then I can put airports anywhere else in the house?
Actually the "easiest solution" would be to have the AXs connected by wireless to your "main" wireless network. Not sure why you were not able to do so with your current AX. The AirPort is capable of connecting to most wireless networks operating on either the 2.4 or 5 GHz band and in all of the currently available radio modes: 802.11a/b/g/n.
And lastly in that scenario can different ipods/ipads connect to different units and play their own tunes?
From iOS devices you can only stream to one AirPlay-ready device at a time. From a Mac or PC, you can stream to one or more devices simultaneously ... but you cannot stream multiple audio tracks to different base station simultaneously.
