In iTunes 11 "Create..." is in the File menu, not the Advanced menu.

You don't understand what I mean.
an aiff file is on my desktop.
When I click on « Create...» in the File menu, iTunes is unable to convert this aiff file.
But in the last version, it does.
The search engine give a liste of results, but not in the itunes windows.
The illustration of Album don't appear in the left corner like the last version.
Sad of this.

Same problem here? Itunes 11 does not have "advanced" area to convert files?

First, import the aiff file into iTunes by dragging it onto the window.
Next, locate the tune in iTunes (check the recently added playlist).
Third, right click on the track. Choose "Create mp3 version" from the resulting pop-up menu.

click on song from iTunes library
Go to File>Create New Version (at the bottom)>Create mp3 Version
this is the new way iTunes 11 does it.
I was scratching my head in the same manner, as I used to find it in another drop down menu
