I had this problem too. However, I discovered that I had been opening iTunes in 32-bit mode because of an old plug-in called iToner which didn't support 64-bit. It seems that iTunes 11 doesn't like 32-bit mode? Anyway, once I switched back to 64-bit, my iPad synced with no problems. (The iToner plug-in no longer works but I don't need it anyway).
To make sure you're using 64-bit mode, close iTunes then go to your Applications folder, right click on iTunes and click Get Info. Make sure the 'Open in 32-bit mode' is unchecked. Next time you open iTunes it should be in 64-bit mode. Worked for me!

Thank you, thank you, thank you! This solved it for me, too.
I was also running iToner, which is scheduled to release v3 soon (which is supposed to be compatible — we'll see).
